Leerdammer Original
Leerdammer Original is the classic Leerdammer cheese of pasteurised cow's milk, with holes and a mild, nutty taste.
Leerdammer Original is the main range of the Leerdammer brand: a Dutch semi-hard cheese with holes and a mild, nutty taste that brings together traits of Gouda and Emmental.
According to the maker, the recipe is simple: pasteurised milk, salt, starter culture and vegetarian (microbial) rennet; the rind is treated with the preservative natamycin. 100 g provide about 356 kcal, 27.5 g of fat and 27 g of protein, plus plenty of calcium. Lactose is below 0.01%, so the cheese is labelled lactose-free.
Leerdammer Original is sold as whole pieces, regular slices and large slice packs; in the UK there are also Mini Cubes. The cheese ripens after brining, and the wheels are coated with wax to keep the texture supple.
How to use it: slices go on bread, in sandwiches and burgers, as the cheese melts evenly. Cubes work in salads and on a cheese board with Maasdam, grapes and nuts. Keep it in the fridge in a closed pack.
