Leerdammer Lightlife
Leerdammer Lightlife is the lighter Leerdammer cheese with 38% less fat than Leerdammer Original.
Leerdammer Lightlife is the lighter range of the Leerdammer brand: a Dutch semi-hard cheese with holes that, according to the maker, has 38% less fat than Leerdammer Original. In the UK, similar slices are sold as Leerdammer Light.
It is made from pasteurised milk, salt, starter culture and vegetarian (microbial) rennet; the rind contains annatto colour and the preservative natamycin. 100 g provide about 277 kcal, 17 g of fat and 31 g of protein, with plenty of calcium. Lactose is below 0.01%.
The lower fat content changes the texture: the cheese is slightly firmer but keeps the mild, nutty taste and the typical holes. Lightlife is sold in pieces and slices.
How to use it: like the classic Leerdammer, it suits bread, sandwiches, salads and bakes; in hot dishes a lighter cheese melts more slowly, so add it towards the end. Keep it in the fridge in a closed pack.
