Zvenigora Dobrodar
Zvenigora Dobrodar is the brand's most aged cheese: it ripens for 45 days in a wax coating and has 50% fat in dry matter.
Zvenigora Dobrodar is a cheese from the Zvenyhorodka cheese plant that the producer calls the most aged cheese in its range. It is made to a recipe by Ukrainian cheesemakers.
Technology. The wheels ripen for 45 days in a special wax coating that lets the cheese "breathe"; during this time it develops fruity notes. The texture is springy and dense, the taste mild but distinct. Fat content is 50% in dry matter (at least 27 g fat and 21 g protein per 100 g). In international terms it is a semi-hard cheese, like waxed gouda.
Formats: a whole wheel of about 3.5 kg and a 135 g pre-packed piece.
How to use: on a cheese board with fruit and nuts, with wine, in sandwiches and for baking. According to the producer, it keeps for more than 120 days at −4 to 0 °C; at home keep it in the fridge and take it out half an hour before serving.
