🧀 Beemster X-O
Beemster X-O is the longest-aged Beemster cheese from cow's milk, with tyrosine crystals and notes of butterscotch, whiskey and pecan.
Beemster X-O is the longest-aged cheese of the Beemster brand: a hard Dutch cheese made from cow's milk.
Ingredients according to the maker: cow's milk, cheese culture, rennet, salt and annatto; fat content 48+ (51.3% fat in dry matter). The cheese ages naturally in the historic warehouses of the CONO Kaasmakers cooperative in the Beemster polder; according to the cooperative, Beemster cheeses are aged for up to 26 months.
The maker describes X-O with notes of butterscotch, whiskey and pecan. Despite the long ageing the cheese stays creamy, and tyrosine crystals form in it as crunchy grains of amino acid.
How to serve: cut X-O into thin slices or break it into small chunks for a cheese board, serve it with wine, nuts and dried fruit, or grate it over pasta and salads.
X-O is the oldest cheese in the Beemster range, alongside the aged Beemster Classic, Royaal and the younger Mild and Medium. Among hard cheeses it sits well on a board next to Gruyère or aged Gouda.
