Beemster is a brand of aged Dutch cow's milk cheeses made by the CONO Kaasmakers cheese cooperative.
CONO says it was founded as a cooperative in 1901 by dairy farmers from villages in North Holland. In 1947 three North Holland cheese dairies, among them De Tijd in Beemster, decided to cooperate; the name CONO already existed as an abbreviation of Combinatie Noord-Holland. The new cheese dairy in the Beemster was opened in November 2014.
According to CONO, the milk comes from cows that graze outdoors for more than 120 days a year, 6 hours a day, and its cheeses are ripened for up to 26 months. Beemster says its cheese ages naturally in historic cheese warehouses.
The range includes Mild, Medium, Aged, Classic, X-O, Royaal, Royaal Grand Cru, Lite, a goat cheese (Goat) and Full Flavour Gouda mini. Beemster Classic is a 48+ cheese with 51.3% fat in dry matter. The brand notes that amino-acid crystals in an aged cheese can be tasted as a subtle crunch, and that evenly spread crystals are considered a mark of quality. The brand states its aim as making the tastiest premium cheese in the Netherlands.
