🧀 Kaltbach Emmentaler AOP
Kaltbach Emmentaler AOP is a Swiss raw-milk Emmental refined for twelve months in the Kaltbach sandstone cave.
Kaltbach Emmentaler AOP is a Swiss hard cheese, Emmental with a protected designation of origin, refined in the sandstone cave of the Kaltbach brand.
It is made in the Emmental region from raw cow's milk and is full-fat, with at least 45% fat in dry matter. Twelve months of refinement in the cave in the Santenberg give it a full, nutty aroma and a characteristic black-brown rind. The maker calls the drops of moisture found in its holes “tears of joy” (Freudentränen). It is naturally lactose-free. 100 g provide about 399 kcal and 31 g of fat.
It is sold cut from the wheel at the counter and as pre-packed portions (for example 250 g).
How to use it: slice it for a cheese board or sandwiches, or grate it into fondue and gratins. Keep it in the fridge and let it reach room temperature before serving.
