Cabot Classic Cheddar
Cabot Classic Cheddar is the everyday cheddar range of the Vermont co-op brand Cabot: Mild, Sharp, Extra Sharp, Seriously Sharp, Vermont Sharp and New York Extra Sharp.
Cabot Classic Cheddar is the everyday cheddar range of the Cabot brand, owned by the farmer co-operative Cabot Creamery Co-operative in Vermont, USA.
Every cheese in the range is cheddar, a hard cow's milk cheese, and they differ in how long they ripen. Mild is the gentlest, followed by Sharp and Extra Sharp; Seriously Sharp is aged for about 18 months and has the boldest flavour in the range. There are also regional versions, Vermont Sharp and New York Extra Sharp. The main format is the block.
Milder versions melt well and suit sandwiches, cheese sauces and macaroni and cheese. Extra Sharp and Seriously Sharp give dishes a stronger taste and work on a cheese board with apples, nuts or crackers.
Keep the cheese in the fridge and wrap it tightly once opened so that it does not dry out. Other cheeses of this class are listed under Hard cheeses.
Why it matters to you: Mild, Sharp or Seriously Sharp on a Cabot pack describes ripening time, not pepper or spice.
