Cabot Specialty Cheddar
Cabot Specialty Cheddar is the Vermont co-op brand's range of longer-aged cheddars: Private Stock, Vintage Choice, Farmhouse Reserve and 3-, 5- and 10-year cheddar.
Cabot Specialty Cheddar is the range of longer-aged cheddars from the Cabot brand, owned by the farmer co-operative Cabot Creamery Co-operative in Vermont, USA.
Every cheese in the range is cheddar, a hard cow's milk cheese. The official site lists Private Stock, aged more than 16 months, Vintage Choice, Farmhouse Reserve, and cheddar aged 3, 5 and 10 years. These cheeses have a dense, slightly crumbly texture, often with small crunchy crystals, and a deeper, sharper flavour than the everyday Cabot Classic Cheddar.
Aged cheddar is mostly served on its own: on a cheese board with apples, pears and nuts, or with wine or beer. Let it reach room temperature before serving. In cooking it is used in small amounts, as grated aged cheddar gives sauces and bakes a stronger taste.
Keep it in the fridge, tightly wrapped. Other cheeses of this class are listed under Hard cheeses.
Why it matters to you: the number of years or months on the pack makes cheddars easy to compare — the longer the ageing, the firmer and sharper the cheese.
