Cathedral City

Cathedral City is a British cheddar brand owned by Saputo Dairy UK. Until 2019 the company was called Dairy Crest; after its purchase by Canada's Saputo Inc. it was renamed, while brands such as Cathedral City stayed the same.
The cheese is made at the Davidstow creamery in Cornwall. According to Saputo in 2020, milk comes from around 330 local farms; the brand itself says it sources milk only from South West England, mostly from family-run farms, and has been making cheese for over 60 years. It is made from 100% cow's milk with starter culture, vegetarian rennet and salt; according to the brand it is suitable for a halal diet and gluten free.
The core of the range is Cathedral City Cheddar: Our Mildest, Mature, Extra Mature and Strongest in blocks, plus grated and sliced. There are also Lighter versions, Lactose Free (no more than 0.01% lactose), Red Leicester and snacks such as minis, Cheese Peelers and spreadable cheese. The Plant Based line is not cheese.
Cathedral City cheddar goes into sandwiches and toasties, is grated into sauces and bakes and served on a cheese board. Grated cheese can be frozen and used straight in hot dishes.
Why it matters to you: on cheddar, the maturity grade from Mildest to Strongest tells you how sharp it will taste.
