Cathedral City Cheddar is the cheddar range of Cathedral City from the Davidstow creamery in Cornwall: Our Mildest, Mature, Extra Mature and Strongest.
Cathedral City Cheddar is the core range of the British brand Cathedral City from Saputo Dairy UK. It is cheddar made at the Davidstow creamery in Cornwall from cow's milk of South West England farms, with starter culture, vegetarian rennet and salt.
In blocks the range has four maturity steps: Our Mildest, mellow, buttery and creamy; Mature, creamy, smooth and full of flavour; Extra Mature, bold, firm and intensely rich; and Strongest, the longest-aged, strong and crunchy. Alongside are Lighter Mature and Lighter Extra Mature with less fat, plus grated and sliced cheese.
Aged hard cheeses like cheddar are naturally low in lactose because it is used up during maturing; for a guarantee there is a separate Lactose Free cheddar.
How to use: Our Mildest for sandwiches and children; Mature for toasties, omelettes and sauces; Extra Mature and Strongest for bakes, macaroni cheese and the cheese board. Blocks can be frozen and thawed in the fridge.
