Faella Formati Extra is the line of artisanal shapes from the Faella pasta factory in Gragnano. The company calls it "Pasta di Gragnano Extra": it is distinguished by unique handcraft, unusual shapes and hand packing, either in an elegant box or in a clear bag closed by hand with brass eyelets.
The line includes long shapes 53 cm in length – candele lunghe, ziti lunghi and mafalde – as well as scialatielli and fusilli al ferretto, which are rolled around a thin metal rod. The 53 cm candele are sold as Pasta di Gragnano IGP; at the same time the company openly notes that fusilli al ferretto, while equal in quality to its other products, fall outside the Pasta di Gragnano IGP designation under the specification.
The ingredients are the same as in Faella's other lines: semolina from 100% Italian durum wheat and Lattari Mountains water. The long, thick candele need especially long drying, up to 60 hours at low temperature. They are broken by hand into pieces before cooking.
The line is meant for festive tables and gifts: long candele and ziti for rich Neapolitan ragù, fusilli al ferretto for thick meat sauces.
