Ziti are a long dry pasta in the form of a hollow tube. Garofalo's Ziti n. 4-15 are 250 mm long, with a thickness of 1.1 mm according to the producer's page.

Dry ziti are pasta di semola di grano duro: under Italian law (DPR 187/2001, art. 6) this pasta is made only from durum wheat semolina and water, drawn through a die, laminated and dried. Garofalo draws its ziti through bronze dies, which gives a rough surface; the producer calls them ideal for dense, hearty sauces and recommends them for baked timballi and pasticci. The product page gives a cooking time of 8 minutes (500 g pack).

Garofalo suggests the Neapolitan timballo di ziti con melanzane (ziti and aubergine timbale). It also notes that zita means bride in Neapolitan dialect and that this pasta was traditionally prepared for wedding lunches; it is also called maccheroni della zita.
