D'Aniello Pasta Speciale IGP

D'Aniello Pasta Speciale IGP is the range of special shapes made by Pastificio D'Aniello in Gragnano. It is dry durum wheat pasta with Pasta di Gragnano PGI status, made from semolina of 100% Italian durum wheat and pure water from local springs.

The range has five shapes: candela lunga, a long hollow tube shaped like a candle; fusillo al ferretto, rolled around a thin iron rod; pettola rigata, a ridged curly ribbon for lasagne-style dishes; cannellone, for stuffing with ricotta, spinach or meat and baking; and zito lungo, the long Neapolitan ziti. All are sold in 500 g packs.

Like the rest of D'Aniello's pasta, the dough is extruded through bronze dies and dried slowly in static cells at 40–55 °C, which leaves a rough surface that holds the sauce.

The long shapes suit thick ragù and tomato sauces, the fusillo goes with vegetable sauces, and cannelloni are baked in the oven.
