🧀 Le Rustique Tomme
Le Rustique Tomme is a semi-hard tomme-style cheese of pasteurised cow's milk from the Savencia brand Le Rustique: Tomme Fruitée since 2013 and Tomme Fumée since 2016.
Le Rustique Tomme is a range of semi-hard pressed tomme-style cheeses from the French brand Le Rustique, part of the Savencia group. In France, "tomme" has long meant a small mountain cheese with a natural grey rind; protected examples include Tomme de Savoie and Tomme des Pyrénées, while the Le Rustique tomme is a branded cheese without a protected name.
According to the maker, Tomme Fruitée was launched in 2013, and since 2016 it has been joined by a smoked version, Tomme Fumée. Both are made from pasteurised cow's milk at the dairy in Bénestroff, in Lorraine in eastern France. The cheese has a greyish rind and a supple, pale paste; the fruity tomme is mild and milky, while the smoked one adds a smoky aroma.
Within Le Rustique it is the pressed cheese alongside the soft bloomy-rind Le Rustique Camembert and Le Rustique Coulommiers.
How to use it: slice it for cheese boards and sandwiches, add it to salads, or bake it with potatoes and on toast. The smoked version works well in warm dishes and burgers. Keep it wrapped in paper in the fridge and let it come to room temperature before serving.
