Le Rustique Camembert
Le Rustique Camembert is the Le Rustique (Savencia) range of Camembert made from pasteurised cow's milk in the Orne: 250 g, portions and Spécial Affiné.
Le Rustique Camembert is the main range of the Le Rustique brand of the Savencia group. These are soft bloomy-rind cheeses made from pasteurised cow's milk in the Orne department of Normandy and sold in a wooden box with a red-and-white gingham wrap.
The brand describes its Camembert as having a melting centre and a pronounced, slightly garlicky taste. The milk is pasteurised for 20 seconds at 72 °C, the curd drains in moulds for 24 hours, and after salting the cheeses ripen in rooms where the white down of Penicillium camemberti and Geotrichum develops. The milk for the 250 g Camembert is collected in France.
The range includes the classic 250 g Camembert, Camembert in 8 portions (240 g) and the longer-ripened Spécial Affiné (260 g). Unlike raw-milk Camembert de Normandie PDO, it is a Camembert without a protected name.
Le Rustique Camembert is served on cheese boards, baked in its wooden box in the oven and added to sandwiches, quiches and tartiflette. Keep it in the fridge in its original pack.
