Also known as: canelloni, cannellone

Large pasta cylinders that are filled and baked in the oven; made from durum wheat semolina or from semolina and eggs.

Cannelloni are large pasta cylinders that are filled and baked in the oven. De Cecco describes them as pasta formed into cylinders to hold a filling; its Cannelloni n° 100 suit fillings of meat, or of vegetables and ricotta.

In Italy, dry pasta is made only from durum wheat semolina and water (DPR 187/2001, art. 6); egg pasta contains at least four whole hen eggs and no less than 200 g of egg per kilogram of semolina (art. 8). Granoro's Cannelloni di semola n. 76 list durum wheat semolina as the only ingredient and, according to the producer, are prepared directly from raw. De Cecco's Cannelloni n° 100 all'uovo are made of semolina and eggs (19.36%).

The most common recipe bakes them filled, under a thin layer of tomato sauce and béchamel. The 250 g pack of De Cecco's Cannelloni n° 100 gives a cooking time of 20 minutes; the instructions on the pack always take precedence.
