Manzanilla-Sanlúcar de Barrameda is the lightest, palest sherry, aged in the coastal town of Sanlúcar de Barrameda. Manzanilla is the lightest and palest sherry. It is made only in the coastal town of Sanlúcar de Barrameda in Andalusia in southern Spain, at the mouth of the Guadalquivir river. It is one of the appellations of the "sherry triangle".

The wine is made from the white grape Palomino. It is fortified: grape spirit is added, but not much. Then it is aged in barrels under a film of yeast called flor. The sea is near, the air is damp and cool, so the flor is thick here and lasts all year. The film protects the wine from oxidation and gives it a special taste.

Manzanilla is pale, dry and light. The taste is almond, yeast, salty sea breeze and apple. It is drunk chilled as an aperitif, with fried fish, seafood and olives. An open bottle is best finished quickly.

Manzanilla is a separate style among sherries. Manzanilla Pasada is an aged version, darker and nuttier.
