🍇 Palomino
A white grape from Andalusia, Spain; the main base of Sherry.
Palomino is a white grape from Andalusia in southern Spain. It is the main basis of sherry, the famous fortified wine. It grows in the Sherry Triangle between Jerez, Sanlúcar de Barrameda and El Puerto de Santa María, in Cádiz province, on the white chalky albariza soil.
By itself Palomino is neutral: it has little acidity and few vivid aromas. This is its strength. It takes well to the influence of yeast and ageing, so dry sherries such as fino, manzanilla and oloroso can be made from it. It is the ageing, not the grape, that creates the taste of sherry.
Palomino also grows in other regions of Spain. In Galicia and the Canary Islands, for example in the Abona area and the Orotava valley, ordinary white wines are made from it. In the Canaries it is called Listán Blanco. It is related to other grapes, such as Listán Negro.
Palomino is also grown in South Africa and other countries. Table wine from it is simple and light, and the grape owes its real fame to sherry.
