Liguori Da forno
Liguori lasagne sheets and cannelloni of Italian durum wheat semolina that go into the oven without pre-cooking.
Liguori Da forno ("for the oven") is a two-shape range for baking: lasagne sheets and cannelloni. Both are made from Italian durum wheat semolina, and the sheets have a rough surface from the bronze die.
The key feature is that the pasta needs no pre-cooking: it goes into the dish raw together with the sauce and cooks in the oven. For lasagne the maker gives about 40 minutes of baking.
Liguori suggests a classic lasagne with ragù, béchamel and parmesan, or a "white" version with mushrooms or vegetables. Cannelloni are tubes for stuffing: they are filled with minced meat, ricotta and spinach or vegetables, covered with sauce and baked.
This is dry durum wheat pasta; the range page does not state Pasta di Gragnano PGI status.
The range is made by Liguori, a pasta factory on Via dei Pastai in Gragnano whose history goes back to 1795. The company follows its certified "Liguori method": durum wheat from southern Italy, slow kneading with spring water from the Lattari Mountains, bronze dies and slow drying at low temperature.
