🍇 Pedro Ximénez

Pedro Ximénez is a white wine grape from Andalusia in southern Spain. Very sweet sherry is made from its sun-dried berries. The grapes are laid out on mats in the open air, where they dry and lose water. The sugar becomes concentrated and the juice turns thick.
The grape grows in the areas of Jerez, Montilla-Moriles and Málaga, as well as other parts of Andalusia. Its wine is dark brown and syrupy, smelling of raisins, figs and nuts. It is also used to sweeten other sherries. In Montilla-Moriles the same grape is made into dry wines. The grape belongs to the world of fortified and sweet wines.
Pedro Ximénez does well on chalky soil. DNA studies suggest it descends from Gibi, an old table grape. Its wines suit desserts and cheese, and are sometimes simply poured over ice cream.
