🍷 Pneumatic press
A drum with a soft bladder inside that gently squeezes the berries with air.
A pneumatic press is a modern grape press in the form of a horizontal drum. Inside is a soft cushion, or membrane. When it is inflated with air, it presses the berries gently against the walls of the drum, and juice runs out through slots.
In old presses grapes were crushed with a heavy plate or a screw. This bruised the berries badly, and bitter substances from seeds and skins came out with the juice. The pneumatic press acts more softly. Pressure rises gradually and can be controlled precisely.
Because of this whole bunches can be pressed without being crushed first. The result is clean must with few solids. This matters especially for white and sparkling wines, where light, fresh juice is wanted.
The drum turns from time to time to loosen the mass, and the pressing cycle runs by programme. The pneumatic press is one of the modern types of wine press and has become standard in many wineries.
