๐ท Recioto
A sweet Italian wine from semi-dried grapes, from Valpolicella or Soave.
Recioto is a sweet Italian wine made from partly dried grapes. It is produced in two areas of Veneto: Valpolicella (Recioto della Valpolicella) and Soave (Recioto di Soave).
In Valpolicella the base is red varieties, above all Corvina. In Soave it is the white Garganega. The grapes are picked ripe and left to dry on racks so that water leaves and sugar concentrates. This is called appassimento. The juice then ferments, but not to the end: part of the sugar stays, so the wine is sweet.
Related wines are Amarone and passito. Amarone is also made from dried berries, but is fermented to dryness. Passito is the general Italian term for wines from dried grapes, and Recioto is one of them. Recioto is thought to be older than Amarone: sweet wine was once the norm in these places. It is served with desserts and blue cheeses. It is among the Italian wines with a long history.
