A sweet white wine from dried Garganega grown on the Soave hills.

Recioto di Soave is a sweet white wine with a protected name from Veneto in northern Italy. It is made around the town of Soave from the Garganega grape. The grapes are picked and dried on racks or in crates for several months until they lose part of their water. The juice inside becomes thick and sweet.

The juice then ferments slowly, and part of the sugar remains. The result is a golden wine with aromas of honey, apricot, almond and dried fruit. A sparkling version also exists. Recioto is paired with desserts and blue cheese, or drunk on its own in a small serving.

The name comes from the word “recie”, meaning “ears”: the upper parts of the bunch, the ripest and sweetest, were picked for sweet wine.

Recioto di Soave belongs to Soave, a historic area on volcanic hills near Verona. It is a white sweet wine and a reminder that drying grapes is an old Italian winemaking technique. Alcohol is for adults.
