Sorrentino i Classici BIO
Pastificio Sorrentino's organic classic shapes from Gragnano: calamarata, mezzi paccheri and long fusilli al ferretto.
Sorrentino i Classici BIO is the organic version of the classic shapes of Pastificio Sorrentino in Gragnano, part of its organic family "L'Anima di Grano". It is dry durum wheat pasta made from semolina of durum wheat grown organically in Italy and certified by ICEA.
The range has three shapes: calamarata (12 minutes), mezzi paccheri (12 minutes) and long fusilli al ferretto (14 minutes), all in 500 g packs.
Like all Sorrentino pasta, it is shaped through bronze dies, which give it a rough surface, and dried slowly for more than 48 hours at 40–60 °C.
Calamarata, named for its likeness to squid rings, suits seafood and tomato sauces; mezzi paccheri go with ragù; fusilli al ferretto with thick meat and vegetable sauces.
The same shapes also appear in the maker's Pasta di Gragnano PGI range.
