Sorrentino gli Esclusivi BIO
Pastificio Sorrentino's organic unusual shapes: faraglioni, scapricciatielli, lagane and short fusilli al ferretto.
Sorrentino gli Esclusivi BIO ("the exclusive ones") is the organic range of unusual shapes made by Pastificio Sorrentino in Gragnano, part of its organic family "L'Anima di Grano". It is dry durum wheat pasta made from semolina of durum wheat grown organically in Italy and certified by ICEA.
The range has four shapes: faraglioni, scapricciatielli and short fusilli al ferretto, each cooking in 14 minutes, and lagane, wide ribbons of southern Italian tradition that cook in 9 minutes. All come in 500 g packs.
The pasta is drawn through bronze dies and dried slowly for more than 48 hours at 40–60 °C, which gives it a rough surface.
These large shapes suit thick sauces such as ragù, sausage or vegetable sauces; lagane are a classic with chickpeas.
The same shapes, together with fornacelle, spaccatielli and virgole, make up the maker's Sorrentino gli Esclusivi IGP range.
