🧀 Zanetti Provoloni
Zanetti Provoloni is the Provolone Valpadana PDO range of the Italian company Zanetti: mild (dolce) and sharp (piccante), in shapes from 5 to 100 kg.
Zanetti Provoloni is a range of provolone with the protected designation Provolone Valpadana, made by the family-owned Italian company Zanetti of Lallio near Bergamo.
Provolone Valpadana is a pasta filata cheese made from cow's milk: the curd is heated and stretched, then shaped and matured. It comes from the Po valley. Zanetti explains that the cheese is mild (dolce) or sharp (piccante) depending on the rennet used. According to the company, the fat content is at least 44% in dry matter.
The range includes traditional shapes in different sizes: the 20 kg Mandarino, the long Salame weighing from 5 to 100 kg, and the 10 kg Gigantino, as well as portions for home use. The large shapes are usually cut to order at deli counters.
How to use it: mild provolone is sliced for sandwiches and cheese boards and baked into hot dishes, as it melts well. Sharp provolone, matured longer, is served in chunks with red wine, grated over pasta or used in fillings. Keep it in the fridge, wrapped in food paper or film.
