🧀 Zanetti Gorgonzola
Zanetti Gorgonzola is the Gorgonzola PDO blue cheese range of the Italian company Zanetti: 12 kg wheels and the Goccia Verde, Verdi Pascoli and Stella Mild lines.
Zanetti Gorgonzola is a range of Gorgonzola, the blue cheese with an EU Protected Designation of Origin, offered by the family-owned Italian company Zanetti of Lallio near Bergamo.
Gorgonzola is a soft blue cheese made from cow's milk in northern Italy: during ripening, noble mould develops inside the cheese, forming greenish-blue veins and giving it its typical flavour. According to Zanetti, the cheeses in this range contain at least 48% fat in dry matter.
Formats in the range: the whole wheel of about 12 kg, plus halves of 6 kg, quarters of 3 kg and eighths of 1.5 kg under the Goccia Verde, Verdi Pascoli and Stella Mild names. Stella Mild, as its name suggests, is the milder version. Such pieces are usually cut to weight at cheese counters.
How to use it: serve Gorgonzola on a cheese board with pears, walnuts and honey, stir it into creamy sauces for pasta and gnocchi, add it to risotto or put it on pizza. Let it stand at room temperature for half an hour before serving. Keep it in the fridge, tightly wrapped and away from other cheeses.
