🧀 Zanetti Parmigiano Reggiano
Zanetti Parmigiano Reggiano is the PDO Parmigiano Reggiano range of the Italian company Zanetti: whole wheels, pieces, flakes and grated cheese.
Zanetti Parmigiano Reggiano is a range of Parmigiano Reggiano, the hard Italian cheese with an EU Protected Designation of Origin, sold by the family company Zanetti of Lallio near Bergamo.
Only cheese made and processed in the area of origin by the traditional method, with controlled feeding of the cows and quality selection, may carry the name Parmigiano Reggiano. A wheel can be fire-branded only once it has completed 12 months of ripening. The cheese is made from cow's milk; Zanetti gives a fat content of at least 32% in dry matter.
Formats in the range: whole wheels of about 35 kg, including Vacche Rosse (from the milk of red cows) and the mountain product "Prodotto di montagna"; vacuum-packed blocks from 1 to 8 kg; portions; flakes (scaglie); freshly grated cheese; and organic portions and grated cheese under the Bio label. A separate Extra Aged group offers cheese ripened for 30 and 36 months.
How to use it: grate it over pasta, risotto and soups, scatter flakes on salads and carpaccio, and serve chunks of older cheese on a cheese board with wine. Keep it in the fridge, tightly wrapped.
