Antiche Tradizioni di Gragnano Pasta Regionale
Regional shapes by Antiche Tradizioni di Gragnano in dry durum wheat semolina pasta: trofie, orecchiette, fusilli and cortecce.
Antiche Tradizioni di Gragnano Pasta Regionale is a small line of regional pasta shapes made in Gragnano by Antiche Tradizioni di Gragnano. These are formats that originated in other parts of Italy but are produced here in the same way as the rest of the range: from durum wheat semolina of 100% Italian wheat and Monte Faito spring water, drawn through bronze dies and dried slowly at low temperature for at least 24 hours.
The line has five shapes: trofie, the short twisted pasta of Liguria; orecchiette, the small ear-shaped pasta of Apulia; fusilli and the smaller fusilletti; and cortecce, short curved strips shaped like pieces of bark.
Trofie are traditionally served with pesto, orecchiette with turnip tops or tomato sauce, and fusilli and cortecce hold chunky vegetable and meat sauces well. All of them are dry durum wheat pasta.
