🏷️ Auslese

Wine classification ✔ Checked: 10.2026 · sources: 3

A level made from selected very ripe bunches, often sweet.

Auslese is a level in the German and Austrian Prädikatswein system, that is wines of special quality. The name means "selection": only the ripest bunches are picked for such wine. It is usually a sweet wine, but dry ones exist too.

Auslese ranks above Spätlese and below Beerenauslese. The minimum sugar in the must depends on region and grape: in Germany roughly 83 to 100 degrees Oechsle (the scale of sugar in juice), in Austria higher. The higher the degree, the sweeter and richer the wine. The grape is most often Riesling, but there are others.

On some bunches noble rot grows, and the wine then gets notes of honey and dried fruit. Auslese wine is usually golden, with aromas of apricot, peach and citrus. Bright acidity makes it fresh rather than cloying.

Auslese can be aged for decades. It is served with desserts, fruit and soft cheeses, and the dry versions with fish.
