🥃 Aviation American Gin
The core Aviation gin: seven botanicals, a 48-hour steep, one distillation in a copper pot, 42% ABV.
Aviation American Gin is the core, classic gin of the Aviation Gin brand, the one with which the brand started in Portland. Its strength is 42% ABV (84 proof). Unlike the London dry style, juniper is not dominant here: the authors of the recipe called it "botanical democracy", where no single plant overshadows the others.
According to Difford's Guide, the botanicals are juniper, coriander, lavender, anise, cardamom, Indian sarsaparilla and sweet orange peel. They are steeped for 48 hours in neutral grain spirit, distilled once in a copper pot and diluted with distilled water to bottling strength. The recipe was developed by bartender Ryan Magarian and the House Spirits distillery.
Why it matters to you. This is the base version of the brand: it is the one to compare with the flavoured Aviation Cranberry & Blood Orange, which adds cranberry and blood orange to the same botanicals. In cocktails it will be softer on juniper than a London dry gin. The WHO reminds us that there is no safe level of alcohol consumption.
