Bernbacher Dinkel
Bernbacher spelt pasta made only from spelt semolina and Alpine-foothill water in Bavaria: Spirale and Schneckerl.
Dinkel is the spelt pasta range of the Bavarian family company Bernbacher. According to the brand, it is made only from spelt semolina and water from the Alpine foothills, without egg. Spelt (Dinkel in German) is an old relative of common wheat, popular in southern Germany; it contains gluten, so this pasta is not suitable for people with coeliac disease.
The range has two shapes: Spirale (spirals similar to fusilli) and Schneckerl (small snail shapes). The brand says the pasta is produced and sold in Bavaria under its "Bavarian purity standard" and packed in recyclable FSC paper. Bernbacher also offers an organic version, Bio Dinkel.
Spelt pasta has a slightly sweet, nutty taste and suits vegetable dishes and light sauces. Because it is made from a grain other than durum wheat, it belongs to pasta from other flours.
