Tress Bio Dinkel is the organic spelt pasta line of Tress. According to the official website, it uses only light spelt flour, and light wholegrain spelt flour for the wholegrain spaghetti, from EU organic farming. The control body is DE-ÖKO-006. The recipe contains no eggs or animal products: just spelt flour and water.
The line has seven shapes: ribbon noodles (Bandnudeln), spirals, corkscrews (Korkenzieher, similar to cavatappi), wavy Spätzle (Wellenspätzle), coarse soup noodles, spaghetti and wholegrain spaghetti. All are made from spelt flour processed according to the principles of the EU organic regulation.
The producer stresses that spelt is rich in protein, vitamins and minerals and suits people who pay attention to a balanced diet; its natural husk protects the grain from harmful influences. The finished pasta is packed in FSC-certified paper from sustainably managed forests, printed with water-based inks, so the packaging can go into paper recycling. Spelt contains gluten, so this pasta is not gluten-free.
