🧀 Biraghi Gorgonzola DOP
Biraghi Gorgonzola DOP is the Gorgonzola PDO range of the Biraghi dairy in Piedmont: sweet rindless cuts, piccante, erborinato and Grangusto.
Biraghi Gorgonzola DOP is the Gorgonzola PDO range of the Biraghi dairy. The wheels are made and aged at the plant in Cavallermaggiore (Cuneo); the province lies within the Gorgonzola area in Piedmont.
Gorgonzola is a blue cheese made from pasteurised cow's milk with veins of Penicillium mould. Biraghi's range includes: Gorgonzola DOP Biraghi, sweet, soft and creamy with no side rind because it is cut from the heart of the wheel (200 g tray made of recycled plastic); Gorgonzola DOP piccante, also in a tub; Erborinato, with more mould; and Grangusto and Selezione Gastronomia for the deli counter.
Keep it in the fridge in a closed pack, away from other cheeses.
How to use: sweet Gorgonzola spread on bread or stirred into pasta and risotto sauces; piccante on a cheese board with pear, walnuts and honey, and with sweet wines.
