Castello Creamy Blue is a soft Danish blue cheese from the Castello brand, made since 1969.
The Tholstrup Cheese Company began developing its first blue cheese in the 1960s and created Creamy Blue to combine the mild, creamy qualities of brie with the character of blue mould. The cheese has a soft texture and a delicate blue flavour.
Ingredients listed by the maker: pasteurised milk, cream, salt, starter culture, microbial rennet and blue mould culture. Thanks to the added cream, 100 g contain 42 g of fat, which gives the cheese its rich texture.
Creamy Blue belongs to the blue cheese family, which also includes Danablu and Roquefort. It is sold in pieces, for example 150 g.
How to use it: serve it on a cheese board with pears, grapes, honey or walnuts, spread it on dark bread, or melt it into sauces for steak and pasta. Take it out of the fridge about 30 minutes before serving so the texture softens, and keep it refrigerated in its original packaging.
