Mlekovita Rokpol
Also known as: Rokpol, Rokpol Blue
Mlekovita Rokpol is a Polish blue-veined cow's milk cheese that, according to Mlekovita, has been made and tended by hand since 1956.
Mlekovita Rokpol is a Polish blue-veined cow's milk cheese made by the Mlekovita dairy cooperative. According to the cooperative, Rokpol has been made and tended by hand using a traditional method by skilled cheesemakers since 1956.
The paste is veined with blue mould. The producer describes the taste as bold and slightly sharp. Rokpol is sold as a 165 g portion and as whole and part wheels of about 2.5, 1.2 and 0.6 kg. The cooperative makes its mould-ripened cheeses at plants that include a factory in Baranowo.
How to serve it: on a cheese board with grapes, nuts and bread, or as a snack with wine. Crumbled Rokpol goes into salads, sauces and pasta and brings out the flavour of meat and fish dishes.
Keep it in the fridge, tightly wrapped and apart from other cheeses so the mould does not spread to them.
Rokpol is a Polish cheese of the same class as Roquefort and Gorgonzola and is listed under blue cheeses.
