Birkel 7 Hühnchen
Birkel egg pasta brand from 1932 made from durum wheat semolina, wheat flour and 10% whole egg: spaghetti, fork spaghetti, maccaroni, spirals, Krauselli and Trulli.
7 Hühnchen ("7 little hens") is an egg pasta range of the German brand Birkel. According to the brand's history page, the 7 Hühnchen brand was launched in 1932; the range page says the noodles have been known for decades.
Unlike Birkel's No.1, which uses durum wheat semolina only, 7 Hühnchen pasta is made from durum wheat semolina, wheat flour and 10% whole egg from barn-raised hens. The flour gives a softer, more tender bite typical of German household egg noodles.
The range has six shapes: spaghetti, Gabelspaghetti (short spaghetti that can be eaten with a fork), maccaroni, Spiralen (spirals similar to fusilli), Krauselli and Trulli. Spaghetti are al dente after about 9 minutes in lightly salted boiling water. The range is intended for everyday family cooking and belongs to the egg pasta category.
