🥃 Bugey wine spirit (Eau-de-vie de vin originaire du Bugey)
French wine spirit from the mountainous Bugey, also Fine du Bugey: an EU-protected name since 1989; simple distillation in a copper pot still, at least 3 years in oak, from 40% ABV.
Bugey wine spirit (Eau-de-vie de vin originaire du Bugey), or Fine du Bugey, is a French grape spirit from the wines of the mountainous Bugey in the Ain department. The name has been protected in the EU since 1989. It must always be aged in oak for at least three years, so there is no clear Fine du Bugey; the bottled strength is from 40% ABV.
Raw material. Wines with fine lees from the Bugey and Roussette du Bugey appellations are distilled, from 11 grape varieties: gamay, pinot noir, mondeuse, poulsard, chardonnay, altesse, pinot gris, white mondeuse, molette, jacquère and aligoté. A producer may send no more than 6% of the estate's wine for distillation in a season.
Distillation. Only simple distillation is allowed, in a copper pot still of up to 30 hl, loaded with up to 25 hl, with a second run if needed; the still is heated by open fire. The fresh spirit is up to 72% ABV, and 100 l of wine yields at least 8 l of pure alcohol. A travelling still that goes from village to village in winter still serves the growers.
History and taste. Local wines and pomace were praised for their quality spirits as early as 1783. The rules appeared in decrees of 1947 and 1950, and from the 1969 harvest three years in cask became mandatory. The spirit is amber, with aromas of vanilla, light tobacco, toasted brioche and prune.
Why this matters to you. The name Fine du Bugey always means at least three years in oak. Do not confuse it with marc du Bugey, the spirit of pomace from the same region. The WHO reminds us: there is no safe level of alcohol.
