🥃 Calvados Domfrontais
Calvados name from southern Normandy: at least 30% perry pears, column distillation only, ageing of at least 3 years in oak; AOC since 1997.
Calvados Domfrontais is a calvados appellation from the Domfrontais area in southern Normandy, where at least 30% of the fruit is perry pears. It is distilled only in a column still and matured in oak for at least three years, longer than other calvados. It is bottled at 40% ABV or more.
A protected name. The AOC «Calvados Domfrontais» was recognised in December 1997; in the EU register the name belongs to category 10, cider spirit and perry spirit. The zone covers 114 communes in the départements of Orne, Manche and Mayenne, about 1,601 km², at the junction of Normandy, Brittany and Maine. As early as 1942 the local drink had a regulated name, «Calvados du Domfrontais».
Orchards and raw material. At least a quarter of the trees in an orchard are perry pears, at least 70% of the apple trees are phenolic varieties, and 80% of the area consists of high-stem trees under which livestock graze. Pear trees grow slowly here, sometimes bear fruit only after 15 years, and live for more than a century. After the storm of 26 December 1999, about 20,000 new trees were planted.
Production. Adding sugar to the juice is prohibited, and cider or perry must ferment for at least 30 days. Distillation is continuous, in a copper column heated by an open flame, up to 72% ABV. The spirit is then matured in oak barrels for at least three years; caramel and sweetening are allowed only within small limits. A young calvados is fruity, and with age notes of baked goods, dried fruit and spice appear.
Why this matters to you. The name «Domfrontais» on the label signals a clear pear character and an ageing of at least three years. Age statements count from the youngest spirit in the blend. It is a strong drink, at least 40% ABV. The WHO reminds us: there is no safe level of alcohol consumption.
