📜 Château-Chalon
A yellow wine from Savagnin aged under a film of yeast, from a clifftop village in the Jura.
Château-Chalon is an appellation in the Jura region of eastern France, known for yellow wine. The village stands on a cliff above the valley. Only one wine is made here: vin jaune, "yellow wine".
It is made from the white grape Savagnin, which belongs to the Traminer family. The wine ferments and is then left in barrels for at least six years. The barrels are not topped up, and a film of yeast forms on the wine's surface. It protects the wine from oxidation and gives it a special taste.
The flavour is unusual: nuts, dried fruit, curry and dry sherry. The wine is dry, strong and rich. It is bottled in a special bottle, the clavelin of 62 centilitres.
Château-Chalon is a still white wine. It is drunk with Comté cheese, chicken in cream and dishes with nuts. It keeps for decades.
