🍷 Vin jaune
A yellow dry wine from Jura that matures for years in a cask under a film of yeast.
Vin jaune is a special dry white wine from the Jura region of eastern France, aged for years in barrel under a film of yeast. Vin jaune (“yellow wine”) is a special dry white wine from the Jura region of eastern France. It is made from the Savagnin grape. It is known for maturing for years in a barrel under a thin veil of yeast.
The rules require at least six years and three months of ageing. The barrels are not topped up, so the wine slowly evaporates, and a yeast film forms on its surface. The film protects the wine from air and gives it a special taste. Flor wines, such as some sherries, mature in a similar way.
Vin jaune tastes unusual: walnut, curry, dried fruit and zest, with high acidity. The colour is golden yellow. It is bottled in a special bottle called a clavelin, of 620 ml. That is what remains of one litre of wine after ageing. The best wines come from Château-Chalon, where only vin jaune is made.
Vin jaune belongs to the Jura and to French wine. It goes with Comté cheese, chicken with mushrooms and nuts. The Jura has other special wines too, such as vin de paille and macvin. Alcohol is for adults.
