🍷 Still wine

Ordinary wine without carbon dioxide bubbles.

Still wine is ordinary wine without bubbles. It holds almost no dissolved carbon dioxide, so it does not foam or fizz. Most of the world's wines are still: white, red and rosé, dry and sweet.

During fermentation yeast turns sugar into alcohol and carbon dioxide. In still wine the gas simply escapes into the air while the wine ferments in an open or loosely closed vat. In sparkling wine the gas is kept: a second fermentation takes place in a closed bottle or tank.

Before bottling, excess gas is sometimes even removed from still wine. The word still is used to tell these wines apart from sparkling and semi-sparkling ones. Many European appellations, such as Burgenland, Styria or Wagram in Austria, set separate rules for still and sparkling wines. Even Champagne, famous for bubbles, makes still wines, sold as Coteaux Champenois.
