🥃 Emsländer Korn
German grain spirit from the Emsland district in Lower Saxony: EU protected name since 2008; only local wheat, rye, barley, oats or buckwheat; Korn at least 32% ABV, Kornbrand at least 37.5%.
Emsländer Korn is a German grain spirit from the rural district of Emsland in Lower Saxony, protected in the EU since 2008. It is distilled from fermented mash of local wheat, including spelt, einkorn and emmer, as well as rye, barley, oats or buckwheat. “Korn” has at least 32% ABV, “Kornbrand” at least 37.5%.
Purity. The specification allows only water for dilution: no flavourings, colourings or sweeteners, and the yeast may not be genetically modified. The grain is used whole. If the mash is saccharified with malt, the malt may amount to no more than 25 parts per 100 parts of grain. The exception is traces of caramelised sugar up to 0.05 g/l, which must be declared on the label.
How it is made. The grain is ground or steamed under pressure, enzymes or malt convert starch into sugar, and fermentation lasts from two to six days. Distillation is only batch-based: first a raw spirit in a column apparatus, then rectification in a copper column or a plate apparatus, where the “heart” of the run is selected. Dilution and bottling may also take place outside Emsland.
Labelling. “Doppelkorn” or “Edelkorn” require at least 38% ABV, “gereift” or “alter” at least 6 months of maturation in wood, and “ganz alter” at least three years. A grain name such as Weizen-Korn means the spirit comes from that grain alone. Korn distilleries were working in Emsland as early as the 18th century.
Why this matters to you. Korn is not vodka: it keeps soft grain and malt notes. The Emsländer name guarantees local grain and a ban on additives, and a “Korn” without “brand” may be weaker than a typical vodka. WHO reminds us that there is no safe level of alcohol consumption.
