🥃 Estonian Vodka
EU protected name for vodka made in Estonia from spirit of local rye, wheat and/or potatoes and Estonian drinking water; at least 40% ABV, with no sugar or artificial additives.
Estonian Vodka is a vodka protected in the EU, made in Estonia from spirit of local rye, wheat and/or potatoes and Estonian drinking water. Its strength is at least 40% ABV, whereas the EU minimum for ordinary vodka is 37.5%. The technical dossier was submitted by the companies Estonian Spirit and Remedia.
Protection. The name appeared in the EU list of protected spirit drink names in 2008, and in 2017 the European Commission approved the technical dossier; Estonia's Ministry of Agriculture described it as the first Estonian product with this status. Other vodkas may say, for example, “Vodka from Estonia”, but not “Estonian Vodka”.
How it is made. Rye or wheat is not husked and is coarsely ground: a quarter of the flour must consist of particles larger than 1 mm. Potatoes are washed and crushed unpeeled. The mash is saccharified with green malt or natural enzymes, fermentation lasts about 72 hours, and the spirit must be at least 96% ABV.
Water and purity. Only soft Estonian drinking water may be used for dilution, and distilled water is forbidden. The specification recommends about 90 mg/l of calcium and 20 mg/l of magnesium in the water used for mashing and fermentation. Sugar and artificial substances may not be added. The first written mention of vodka in Estonia is the 1485 statute of the Tallinn brewers' guild.
Why this matters to you. The words “Estonian Vodka” guarantee Estonian raw materials, water and a strength of at least 40% ABV; according to the specification, rye makes the taste stronger and spicier, and potato makes it softer and slightly sweeter. WHO reminds us that there is no safe level of alcohol consumption.
