The general Spanish word for sparkling wine; the best known is cava.

Espumoso is the general Spanish word for sparkling wine. It means “foaming” and appears on labels when a wine does not belong to a specific named appellation. Portugal has a similar word, espumante.

The best-known Spanish sparkling wine is Cava. It is made by the traditional method, with a second fermentation in the bottle, mostly in Catalonia from Macabeo, Xarel·lo and Parellada. Espumoso is a broader term. It covers wines from other Spanish regions, tank-fermented wines, and simple, inexpensive sparkling wines for everyday drinking.

Labels often state the method: “método tradicional” means bottle fermentation, as in Cava and Champagne. Sweetness uses the same terms as any sparkling wine, such as brut, seco and semiseco. In Spanish wine, espumoso is a handy clue: the bottle holds sparkling wine, but not necessarily Cava.
