Moro Pasta con grano saraceno
Dry pasta by Pastificio di Chiavenna from Italian durum wheat semolina and wholegrain buckwheat flour: fusilli, penne, lasagne sheets and fidelin.
Moro Pasta con grano saraceno is a dry pasta line of the Moro Pasta brand from Pastificio di Chiavenna that combines classic shapes with buckwheat. The factory links it to the tradition of Valchiavenna, where buckwheat has long been grown in the mountain valleys, and says the pasta is a source of fibre.
According to the official penne product page, the ingredients are Italian durum wheat semolina and wholegrain buckwheat flour (18%). So this is not gluten-free pasta: durum wheat is the base, while buckwheat gives a darker colour and a nutty flavour.
The line has four shapes: fusilli (375 g), penne, sold as pennette (375 g), lasagne sheets (400 g) and fidelin, a thin long pasta (500 g). The factory's website suggests recipes such as a cold pasta salad with penne, crisp courgettes, datterini tomatoes and prawns, or fidelin with basil pesto, feta and tomatoes.
The range suits anyone who wants to vary ordinary dry durum wheat pasta. For the traditional buckwheat pasta of Valtellina, see Moro Pizzoccheri della Valtellina IGP, which has a higher share of buckwheat and the pizzoccheri shape.
