Gastroval's artisan bronze-drawn, slowly dried pasta: with wholegrain buckwheat, of wholegrain rye and of Italian durum wheat.

Gastroval Valtellerie is a line of artisan dry pasta from Gastroval in Albosaggia, Valtellina. According to the official website, all three kinds are made from grain grown and milled entirely in Italy within a certified supply chain. The dough is drawn through traditional bronze dies and the pasta is dried slowly at low temperature.

The line has three pastas in 250 g packs. Pasta di grano saraceno integrale contains 75% Italian durum wheat semolina and 25% wholegrain buckwheat flour, recalling the buckwheat traditions of Valtellina, home of pizzoccheri. Pasta di segale integrale lists only wholegrain rye flour, making it the darkest pasta in the line. Pasta di grano duro italiano is classic dry durum wheat pasta made from semolina alone.

The maker warns that the products may contain traces of soy, celery and molluscs because special pastas are also made in the same workshop. None of the three is gluten-free. The website does not describe the individual shapes.

The line complements the dry Gastroval Pizzoccheri della Valtellina IGP: instead of pizzoccheri ribbons it offers pasta for everyday dishes with sauces such as ragù or with vegetables. Valtellerie is sold through the company's online shop together with other Valtellina products.
