Moro Pizzoccheri della Valtellina IGP is the main line of the Moro Pasta brand from Pastificio di Chiavenna. It is dry pasta with the protected geographical indication Pizzoccheri della Valtellina, which may only be made in the province of Sondrio. The factory says the pizzoccheri follow old local traditions, use wholegrain buckwheat flour and are a source of fibre.
The official product pages list the ingredients as durum wheat semolina, wholegrain buckwheat flour and water. The tagliatella contains 25% buckwheat; the gnocchetto and the organic version contain 20% and, besides semolina, also list a coarser durum wheat meal (semolato).
The line has four formats: Tagliatella (short ribbons, 400 g), Tagliatella steso (500 g), Gnocchetto (small pieces, 500 g) and BIO Tagliatella steso made from organic ingredients (500 g). They are packed in recyclable cardboard.
The classic dish is pizzoccheri alla valtellinese: the pasta is boiled together with potatoes and cabbage and then dressed with butter, garlic and local cheese. The ribbon shape is that of pizzoccheri, the flat buckwheat pasta of Valtellina.
