OSM Sierpc Markiz is a ripened Swiss-type cheese made by the Regional Dairy Cooperative in Sierpc, Masovia. The cooperative's catalogue lists it as Markiz L.Casei and names it among the new cheeses introduced after its cheese lines were modernised.
According to the producer, Markiz has a classic taste and balanced aroma; its traditional recipe is complemented by a strain of Lactobacillus paracasei. The label lists milk, salt, calcium chloride, bacterial cultures (cheese culture, propionic acid bacteria, Lactobacillus paracasei) and annatto colouring. Propionic acid bacteria are the ones that form the eyes in Swiss-type cheeses. There are no preservatives and less than 0.01% lactose.
How to serve: sliced on sandwiches and toast, cubed on a cheese board, grated into bakes and pasta.
