OSM Sierpc Kasztelan is a range of ripened Dutch-type cow's milk cheeses from the cooperative in Sierpc, Poland: classic, creamy, smoked and Złoty.
OSM Sierpc Kasztelan is a range of ripened cheeses made by the Regional Dairy Cooperative in Sierpc, Masovia. Kasztelan is Polish for castellan, the keeper of a castle.
The core of the range is Dutch-type cheese. The producer describes classic Kasztelan as a simple, versatile cheese for everyday dishes; creamy Kasztelan (śmietankowy) is milder with a clear creamy note; smoked Kasztelan has a light taste of natural smoke. Kasztelan Złoty (golden) is a Swiss-type variant with a stronger flavour. The cheeses come as slices, pieces and blocks, and as a mixed pack of slices.
The label lists milk, salt, calcium chloride, bacterial cultures and annatto colouring. There are no preservatives and less than 0.01% lactose. Per 100 g classic Kasztelan has 27 g fat and 26 g protein; the creamy version has 30 g fat.
How to use it: on toast and sandwiches with ham, tomato or cucumber, in salads and bakes; the smoked version goes with grilled vegetables and mushrooms.
In style the Dutch-type Kasztelan is close to Gouda and Edam; these are cheeses listed under semi-hard cheeses.
